Dakgalbi (Stir-fried Spicy Chicken) Recipe

1. Brief description

Boneless chicken breast, chicken leg meat, seasoned with gochujang sauce, mixed with cabbage, sesame leaves, carrots, sweet potatoes, and rice cakes, and fried in a pan. It is a famous dish in Chuncheon, Korea.

2. Cooking ingredients(2 servings)

150g boneless chicken leg, 100g boneless chicken breast, 1 green onion, 1/2 cabbage, 15g (1T) minced onion, 15g (1T) red pepper paste, 45g (3T) soy sauce, 30g (2T) oligosaccharide or plum juice, 15g (1T) minced garlic, black pepper powder, (100g mozzarella cheese, 50g tteokbokki rice cake, 1 chilli according to your preference)

3. How to cook

Step 1. Prepare the onion and red pepper by cutting them diagonally, and the cabbage and sesame leaves into bite-size pieces.

Step 2. The sauce is made by mixing the amount of chopped onion, red pepper paste, soy sauce, minced garlic, and pepper powder and oligosaccharide (or plum juice, or sugar) according to the amount in the cooking ingredients (2. Cooking ingredients). Add or toss the amount of seasoning ingredients to your liking. Gochujang can be spicy, so adjust the amount while tasting it.

Step 3. Cut boneless chicken thighs and chicken breasts into bite-size pieces and marinate them in the sauce made in step.2 for 30 minutes to 1 hour. (If using chicken with bones, remove the bones and also lightly peel the skin. If you don’t like a thick chicken breast, you can cook it only with chicken legs.)

Step 4. Heat cooking oil in a pan and fry the seasoned chicken first.

Step 5. Add green onion, cabbage, and rice cakes for tteokbokki (use pre-boiled rice cakes for rice cakes), cover with a lid, and cook until done. If you add mozzarella cheese at this time, the taste is doubled.

4. cooking tips

Original Korean Dakgalbi (Stir-fried Spicy Chicken) can be spicy, so add mozzarella cheese to make it less spicy. If it is still spicy, drink a yogurt drink to make it less spicy.

Leave a little cooked chicken ribs in the pan, add 200g of rice or ramen noodles, sesame oil, cheese, and seaweed powder to make fried rice or fried noodles. It tastes great.
