Gambas al ajillo Recipe
1. Brief description
Gambas al ajillo is a Spanish dish made by boiling shrimp (gambas) and garlic (ajillo) in olive oil. It tastes and smells good, and it is delicious to eat on top of hard bread such as baguette or soft bread such as ciabatta, or lightly dip in olive oil.
2. Cooking ingredients(2 servings)
20 raw or frozen shrimp meat (300g), 10 garlic cloves (50g), baguette, 5 pepperoncino (or hot pepper), 200g (1Cup) olive oil, 15g (1T) fish sauce or a little bit of salt, A little pepper powder, a little herb powder
3. How to cook
Step 1. Remove the moisture from the raw prawns, and thaw the frozen raw prawns by soaking them in cold water to remove the moisture.
Step 2. Slice the garlic thinly.
Step 3. Put olive oil, garlic, and pepperoncino in a heated pan and boil over medium heat for 3 to 4 minutes until the garlic is softly golden brown.
Step 4. Add the shrimp, add a little fish sauce, and boil over medium heat for another 3-4 minutes, then turn off the heat. (If you don’t have fish sauce, season lightly with salt.)
Step 5. Add pepper powder, and herb powder to taste.

Peperoncino (chili pepper) is used to make the olive oil slightly spicy, but if you eat peperoncino, be careful as it can be spicy. Adjust the amount of garlic or pepperoncino according to your taste. Cooked olive oil can be very hot, so eat it carefully.
