Mapo Tofu Recipe
1. Brief description
Mapo tofu is a representative dish of Sichuan, China. Mapo tofu was first created by a grandmother in Sichuan Province and is now a world-famous healthy tofu dish. The seasoning uses Chinese chilli bean sauce(toban sauce), a sauce unique to Sichuan, China, made by fermenting red pepper and soybeans.
2. Cooking ingredients(2 servings, 30minutes)
300g tofu, 50g pork loin (minced meat), 1 green onion, 30g peeled garlic, 10g ginger, 2 red peppers chilli oil Red pepper powder 30g, cooking oil 40g, water 100ml, Chinese chilli bean sauce (toban sauce) 20g, soy sauce 20ml, sugar 10g, sesame oil 10ml, black pepper powder 10g, starch (potato starch) 30g, water starch (water:starch=2:1)60g, rice wine 10ml
3. How to cook
Step 1. Cut the tofu into bite-sized pieces and blanch in boiling salted water to warm it up.
Step 2. Remove the seeds from the red pepper and chop it finely. Chop the green onion, garlic and ginger as well. Put cooking oil and red pepper powder (3:1) in a pan, heat it, and then filter it with a paper towel to make red pepper oil.
Step 3. When the pan is hot, put red pepper oil, add green onion, garlic, ginger, and red pepper, heat it up, and season with soy sauce. At this time, it is recommended to add a little rice wine to remove the bad smell.
Step 4. In Step 3., add minced pork and stir-fry, then add Chinese chilli bean sauce (toban sauce) and red pepper powder and stir-fry, then pour the broth and bring to a boil, season with salt, pepper powder, sugar, and rice wine.
Step 5. Put the blanched tofu in water and bring it to a boil, then add water starch little by little to thicken the consistency, then drizzle with sesame oil to finish.

Tofu must be cut into dice or lozenges and lightly blanched in boiling salted water to prevent crushing. Red pepper, green onion, garlic, and ginger should be cut to the same size for better viewing.
