Chinese Stir-fried tomato and scrambled eggs Recipe

1. Brief description

200g medium tomato (or cherry tomatoes), 3 eggs, 15g (1T) cooking wine, 45g (3T) olive oil, 5g (1/3T) salt or 15g (1T) oyster sauce, 45g to 60g (3) chopped green onion ~4T), a little pepper powder and sesame

3. How to cook

Step 1. Slice green onions and mix the eggs with cooking wine. (If you don’t have cooking wine, you don’t have to use it.)

Step 2. Cut tomatoes in half and cut them into 8 equal parts. (If you use cherry tomatoes, cut them in half.)

Step 3. When the pan gets hot over medium heat, put olive oil on it and stir-fry green onions first.

Step 4. Add sliced tomatoes and stir-fry for 3 minutes, then push the pan aside.

Step 5. Add olive oil 1T and add the beaten egg and stir slowly to make scrambled eggs moist.

Step 6. When the egg is moist and fluffy, add salt or oyster sauce and mix it with tomato, turn off the heat and sprinkle some pepper powder.

Depending on your taste, you can stir-fry 1/4 of chopped onion and 1T of minced garlic with green onion.
