1. Brief description

Crepes, one of France’s representative dishes, are divided into dessert crepes and dining crepes. Crepes for meals are often eaten as a convenience food with eggs, ham, and vegetables, and this is called ‘galette’. It originated from making crepes with buckwheat instead of bread when wheat was scarce. There are various forms of galette, and a galette like this recipe in which various ingredients are put and baked is called ‘galette complete’.

4 strips of bacon (can be replaced with sliced ham, salami, jamon, etc.), 2 slices of cheese, 2 eggs, a little arugula (you can change or add your favorite vegetables according to your taste), cooking oil 15g (2T), melted Butter 10g (2t)

3. How to cook

Step 1. Put buckwheat flour, sugar, salt, and water in a bowl, except for the egg, and loosen enough so that there are no lumps.

Step 2. Add 1 egg to the sufficiently loosened dough ingredients, cover and marinate in the refrigerator for at least 1 hour. The crepes should be aged for at least 1 hour so that they do not tear easily when baking.

Step 3. Heat cooking oil in a pan over low heat, put the dough and spread it thinly.

Step 4. Bake on low heat for about 3 minutes and when the dough is half cooked, spread butter evenly.

Step 5. Lay bacon and sliced cheese in the middle of the dough.

Step 6. Fold the dough little by little from all sides to the inside to form a square shape.

Step 7. Put an egg in the center, cover with a lid, cook for 1 to 2 minutes, put it in a bowl, and put up vegetables such as arugula.

Unlike crepes, only one side is baked. You can add pepper, fruits, and vegetables according to your preference, and it is a simple and nutritious food that goes well with coffee, juice, and milk.
