Vichyssoise Recipe

1. Brief description

Vichyssoises means cold cream soup in the style of the Vichy region of France. The origins of this soup are controversial.

The first was that Louis XV of France, fearing poisoning, had several retinues try potato soup first. However, it was tasted by too many people first, and by the time Louis XV ate it, it was cold, but Louis XV enjoyed it.

Second, Louis Diat, French chef at the Ritz-Carlton hotel, New York, USA, grew up in Vichy as a child. At this time, grandmother and mother often made cold potato soup. Inspired by this, Louis Diat offered Crème Vichyssoise Glacee to guests at the hotel, which became popular.

2. Cooking ingredients(2 servings, 40 minutes)

2 potatoes, 4 green onion (white part only), 1 onion, 300ml chicken stock or water and chicken stock cube, 30g(2t) butter, 100ml whipped cream(or milk), a little bit of salt, a little bit of white pepper powder, a little bit of parsley or decorative vegetables

3. How to cook

Step 1. Dice the potatoes, and shred the onion and green onion.

Step 2. Heat the butter in a pot and saute the vegetables first. Saute well until onions are translucent.

Step 3. Add the prepared chicken stock to the stir-fried vegetables, add a little bit of salt and a little bit of white pepper powder, and simmer until the potatoes are cooked.

Step 4. Put the contents of the pot and milk or whipped cream in a mixer and grind well.
