Gazpacho Recipe

1. Brief description

Gazpacho is a food that originated in Andalusia, southern Spain. Gazpacho is a Spanish cold soup made with tomatoes, cucumbers, onions, and paprika. It’s easy to make and cool to eat on a hot summer day.

2. Cooking ingredients(2 servings)

5 tomatoes, 1/2 cucumber, 1/2 red paprika, 1 celery, 1/2 onion, 1 garlic clove, 2 rye bread or white bread, 30ml (2T) olive oil, 15ml (1T) lemon juice , a little salt, a little pepper to taste, olives, basil

3. How to cook

Step 1. For easy peeling, cut the tomatoes into cross shapes and blanch them in hot water for 10 to 20 seconds. Take out the poached tomatoes and peel them.

Step 2. Chop the cucumber, red paprika, and onion in a blender for fine grinding. You can also add celery and a little garlic if you like.

Step 3. Grind the ingredients prepared in Step 2. in a blender.

Step 4. Add a little salt, pepper, lemon juice, olives, and olive oil to the soup made in step 3 according to your taste.

Step 5. Place basil, vegetable garnish, rye bread or slices of bread on top of the prepared gazpacho soup.
