Cha Zio(Chả giò, Vietnamese Fried Dumplings) Recipe
1. Brief description
Cha-Zio(Chả giò) is a type of Vietnamese dumpling made by mixing minced pork, shrimp, crab meat, vegetables, etc., wrapped in rice paper and deep-fried. In northern Vietnam, it is called ‘Nem rán’ or ‘Nem’. It tastes great when dipped in ‘nước mắm’ sauce, a traditional Vietnamese fish sauce, or chili sauce. Cha-Zio is called differently depending on the stuffing. The one with pork is called ‘Chả giò’, the one with crab meat is called ‘Chả giò cua’, and the one with shrimp is called ‘Chả giò tom’.
2. Cooking ingredients(10 pieces)
10 pieces of rice paper, 7 fresh frozen shrimp meat (about 100g), 100g of minced pork(with vegetables), 1/4 carrot (50g), cooking oil, salt, black pepper, cooking wine.
3. How to cook
Step 1. Frozen raw shrimp meat is thawed in cold water, then drained through a sieve.
Step 2. Mince the pork, and mix with a little salt, pepper, and cooking wine.
Step 3. Finely chop the carrots and some vegetables.
Step 4. Chop the raw shrimp meat finely and put it in a bowl.
Step 5. Add finely chopped raw shrimp meat, finely chopped carrots, and vegetables to a bowl and mix.
Step 6. Add 1 tablespoon of cooking oil and the pork from Step 2. to a heated pan and stir-fry for 2 to 3 minutes over medium heat.
Step 7. Add the ingredients from Step 5., cook for 2 more minutes, and cool.
Step 8. Soak the rice paper in lukewarm water and spread it out. Put the ingredients of Step 7. in an appropriate amount on rice paper, and roll it up.
Step 9. Put 4 cups of cooking oil in a pan and boil it at 170 degrees. Add the ingredients from Step 8. and fry for 1 to 2 minutes over medium heat.
Step 10. Strain through a sieve to remove oil.
Step 11. Place the dish in a bowl and decorate with vegetables or flowers.
