Saltibarsciai Recipe
1. Brief description
Saltibarsciai is the most beautiful soup in the world made by Lithuania. The color of beets and the white color of a dairy product called ‘kefir’ meet to create a gorgeous color. You can make it with milk instead of kefir. It is a soup served with boiled eggs, sour cream, and dill, and then cooled.
2. Cooking ingredients(2 servings, 20 minutes)
2 beets (Cut the beets into bite-sized pieces or slices), 500ml kefir or milk, sour cream, dill herbs (or a little bit of herbs and parsley powder), a little bit of salt
Add cucumber, green onion and boiled egg according to your taste.
3. How to cook
Step 1. Cut the beets into bite-sized pieces or slices.
Step 2. Put the sliced beets and kefir (or milk) in a bowl and mix well.
Step 3. Place sour cream and dill herbs on top of the well-mixed soup.
Step 4. Add cucumber, green onion and boiled egg according to your taste.
4. cooking tips
You can add a little lemon juice to the milk to get a taste similar to kefir.
If you want to create a more colorful color, grind the beets in a blender and add the ground beet water.
This soup is eaten chilled, but if you don’t like the earthy smell of beets. If you lightly blanch it, the earthy smell will be weakened.
The soup is eaten cold, but it can also be eaten warm.
If you want it a little sweeter, you can add a little sugar beet juice or sugar.
