Egg benedict Recipes

1. Brief description

It is an English muffin dish topped with ham or bacon, smoked salmon or poached spinach, and poached egg, then topped with hollandaise sauce. A man named Benedict ordered a dish that was not on the menu at a restaurant, and the name of the dish was taken after him.

2. Cooking ingredients(2 servings)

1 English muffin (can be replaced with loaf bread), 50g spinach, 30g bacon, 5g (1t) butter, a little bit of salt, a little bit of black pepper

Hollandaise Sauce
2 egg yolks, 70g melted butter, 15g (1T) lemon juice, a little bit of salt, a little bit of pepper

3. How to cook

Step 1. Making Poached Eggs : Add 30g (2T) of vinegar to 600g of boiling water. First, break the eggs and place them in a ladle.

Step 2. With one hand, stir the boiling water in one direction with chopsticks or other tools. At this time, with the other hand, gently beat the egg in the ladle so that it becomes a poached egg in the boiling water.

Step 3. Cook over medium heat for 2-3 minutes until white is opaque. At this point, continue to stir in one direction until the egg whites are slightly cooked.

Step 4. When the whites are properly cooked, scoop them out and place them in ice water, then remove them immediately. (If you dip it in ice water and take it out, it will become more plump.)

Step 5. Making Hollandaise Sauce : Put the egg yolk of the sauce ingredients in a double boiling bowl and mix lightly with a whisk.

Step 6. Add water to the 4/5 point of the hot water pot and boil over medium heat until bubbles form on the edge, and place the double boiling bowl prepared in Step 5.

Step 7. Pour in the melted butter little by little and stir with a whisk for 2-3 minutes.
(Note. Raise and lower the double boiling bowl on the pot so that the eggs do not cook.)

Step 8. When it is moderately sticky, remove it from the pot and add lemon juice, salt, and pepper powder and mix.

Step 9. Remove the spinach roots and tear them one by one. Cut the bacon to fit the size of the bread.

Step 10. Melt the butter in a heated pan, put the English muffins in half and bake them on both sides until golden brown.

Step 11. Add bacon to the heated pan and cook over medium heat.

Step 12. Add spinach, salt and pepper powder to a heated pan and stir-fry over medium heat for 1 minute.

Step 13. Place spinach, bacon, and poached eggs on top of the prepared English muffins, and then top with hollandaise sauce.

Split the poached egg with a fork and knife and dip the ingredients into the flowing yellow ruler before eating. Note. Hollandaise sauce spoils quickly, so eat it within 1-2 hours of making it.
